Zucchini Bread: The Surprising Holiday Treat

If you’ve ever searched for a treat to bring to a holiday party, failed with intricate desserts, or enjoyed a hot beverage on a cold winter night, zucchini bread may be your new best friend. Often during the holiday season, I find myself visiting family and friends empty handed. I’m not a wiz in the kitchen, but this recipe is equally delicious and fool-proof. Don’t let the word bread scare you, there is no kneading or yeast involved with this one. Zucchini bread is a sweet bread, reminiscent of coffee or cinnamon cake. It has few ingredients and is fairly inexpensive to make!

Holiday Zucchini Bread

Prep Time: 20 minutes
Cook Time: 35 – 45 minutes

You will need:
Large mixing bowl
Mixing spoon
Loaf pans (instead of a loaf pan I used three smaller intricate bread pans)
Measuring cups
Cheese grater

3 large eggs
2 cups of sugar
1 cup of oil (recipe tip: use coconut oil in this bread because it has a vaguely sweet taste)
4 cups grated zucchini, equivalent to 3 large zucchini
2 teaspoons of vanilla extract
3 cups and 3 tablespoons of flour
1 1/2 teaspoons of cinnamon
1/2 teaspoon of baking powder
1 teaspoon of salt
1 teaspoon of baking soda

To begin, preheat the oven to 375 degrees. Then wash your zucchini then grate medium or fine using a cheese grater, set aside. Measure out all dry ingredients and combine in large mixing bowl. Add eggs, vanilla extract, and oil. If you used coconut oil like I did; be sure to melt it to a liquid before measuring, do not use congealed oil.

Mix ingredients until dough has a sticky play dough-like consistency. When you reach this point, use your hands to add in the zucchini. I find it is easiest to mix the zucchini in by squeezing and turning the dough with your hands. Once finished, spoon the dough into your pan(s). Bake for 35 – 45 minutes. The bread should become a warm brown color, with a slight crust on the outside and soft bounciness inside.

I particularly like eating this bread for breakfast, or enjoying it on the porch with a nice warm beverage. It is complimented well by hot apple cider. I hope this treat is a hit for you this holiday season, and don’t miss our other seasonal recipes.
